The founding chef Paul Grillo places indulgence at the rank of value and he has the art of devoting real festive moments to it. Trained in the kitchen in France where he learns to 'let the good products speak' and to respect their character, he first settles in Vietnam before opening a first restaurant in Thailand where he wins Iron Chef in 2017. He travels with curiosity through Laos, Cambodia and Korea during his journeys. From Asia, Paul retains the authenticity of the markets, the joy of living in the moment and above all, the street food which constitutes for him a gastronomic identity and an approach to cooking in which he recognizes himself. Soé finds its roots in the richness of these experiences: each dish opens a page of the chef's personal and unique travel diary, just like the photographs he brought back from Asia and which now adorn the restaurant's walls.
The team at Soé speaks above all of passion and friendship. It has been formed over the years, through shared experiences (often gastronomic and always festive!) which sometimes date back to school. It is an atypical group formed in the kitchen and hospitality where everyone is versatile.
